HERBAL ALLIES: ASTRAGALUS FOR IMMUNE SUPPORT

Our family's winter season "must-have", astragalus is a classic Chinese herb used for centuries to enhance immune system function. You can count on this herb to build your immune strength.  Astragalus prevents and cures infections, builds energy, encourages circulatory health and stimulates the metabolism of dietary sugars. Regular use of astragalus has been shown to prevent liver and kidney damaged caused by medications and viruses. Astragalus root is slightly sweet and virtually tasteless, making it an excellent addition to tea and cooking. One of our favorite ways to enjoy the benefits of astragalus root is by making a delicious soup stock.

Nourishing Soup Stock for Immune Support

You can easily make this recipe overnight in a crock pot (freeze any leftovers). Enjoy throughout the season.

  • 4 quarts of water
  • 2 lbs of organic chicken thighs (optional)
  • 2-4 cloves of garlic
  • 5-8 slices of organic astragalus root
  • fresh vegetables of choice (carrots, celery, leeks, onion, mushrooms, etc.)
  • 1 bay leaf
  • 1/4 tsp. of organic turmeric (optional)
  • salt & pepper to taste

Place chicken in a pot and add 4 quarts of water. Bring to boil and add astragalus root and root vegetables of choice. Simmer on low overnight in a crock pot (4-5 hours stove top). Turn off crock pot. Add salt and pepper to taste. Strain and store in the refrigerator or freezer. Use as a base in your favorite soup or rice recipes. Enjoy in good health.

Astragalus is best taken as a cold & flu preventive and should not be taken during an acute infectious illness such as colds, flu, bronchitis, or pneumonia, because it can cause stagnation. If you have an acute infectious condition, discontinue use of astragalus until you have fully recovered and resume as usual.
